We are a nation obsessed with food and I have to admit I’m right there with everyone else. I’ve been working at changing my eating and buying habits to foods that are organic and/or locally produced. What a challenge! Now I have another challenge to add to that, one online food site has come up with a carbon calculator so I can see how much my dinner contributes to global warming. Me too! At least if I want eggs I don’t have to feel so bad, they don’t seem to produce much CO2, especially if they are from free range organic hens.

And now I’m thinking of what to eat for my meals. All of this is making me hungry for eggs, which I can get from the Amish family down the road. I think that these eggs are larger, much deeper yellow yolks, and I’m pretty sure that they aren’t stuffing their chickens full of antibiotics. Living in the middle of nowhere can be frustrating, but rewarding, too.

thats crazy…… ive always eaten organic foods though and im vegan, but to think that such a simple food can be so dangerous to the enviroment!!
